What genuinely changes at this headcount

Queueing. A single buffet line serving 200 people takes far too long, and the back of the queue eats cold food. At this size the line has to be doubled or the stations split, so guests approach from more than one direction. This is a layout decision, and it is worth having before the day.

Replenishment also changes. At fifty guests a tray lasts a service; at two hundred it does not, so the kitchen has to be staged rather than laid out once. That is why we bring our own staff rather than dropping food off.

Where the add-ons earn their money

At 200 guests, a live counter is not decoration. It is queue management: it pulls a share of the crowd away from the main line and gives them something to watch while they wait.

A live BBQ, live tandoor or live jalebi counter is AED 10 per person, which is AED 2,000 across 200 guests. A live puri counter is AED 15, so AED 3,000. Table and chair setup is AED 15 per person. Fries and nuggets are AED 5 per person on the 45, 65 and 85 packages, which is usually the cheapest way to keep children occupied.

A realistic total

A 200-guest wedding or corporate dinner on the Classic package with one live BBQ counter comes to AED 13,000 plus AED 2,000, so AED 15,000. Add table and chair setup and it is AED 18,000. That is a complete figure, not a starting one.

Timing at this size

Book three to four weeks out for a corporate event and six to eight for a wedding. Final numbers must reach us three days before, which is also when the remaining 50 percent falls due; the first 50 percent is taken on booking. If fewer guests attend the bill stands at the booked figure, and if more attend it is adjusted upward.
