Chapli kabab at Taier Al Monal, opposite Nesto Hypermarket in Abu Shagara, Sharjah, is AED 12 on the menu, served hot from the pan. For a family, the Chapli Kabab Family Platter brings four chapli kababs, a half chicken karahi, four roghni naan, kheer and a 1.5 litre drink for AED 89.99. We serve it every day from 12:00 PM to 12:00 AM.
What is a chapli kabab?
Chapli kabab comes from Peshawar. Minced meat is mixed with onion, tomato, green chilli, coriander and crushed spices, shaped into a wide flat patty and fried in fat until the outside is crisp and the inside stays juicy. The name is usually traced to the Pashto word for flat. It is spicier and coarser than most kababs, and best eaten straight from the pan.
What makes a good chapli kabab?
- A crisp, almost lacy edge, with a juicy centre
- Coarse mince you can see, not a smooth paste
- Fresh tomato and green chilli through the meat
- Served immediately: chapli goes soft if it waits
- Naan, raita or mint sauce and sliced onion alongside
Chapli vs shami vs gola kabab
- Chapli kabab: coarse minced meat, flat and wide, fried crisp. Spicy. AED 12 at our restaurant.
- Shami kabab: minced meat cooked with lentils, ground smooth, shaped into small patties and shallow-fried. Soft and mild. It comes with our AED 11.99 daal chawal combo and on the weekday buffet.
- Gola kabab: minced meat wrapped round a skewer and cooked over coals, soft and smoky. Mutton gola kabab is AED 30 and on the weekday buffet's live BBQ.
Our guide to Pakistani kababs covers seekh, reshmi and the rest.
What to order with chapli kabab
Chapli kabab is a strong pair for a chicken karahi and fresh naan, which is exactly what the Family Platter does. For a full BBQ spread, see our BBQ and mixed grill guide.
