Nihari is a slow-cooked beef stew, traditionally made from shank, cooked for six to eight hours until the meat gives way completely and the collagen in the bone thickens the gravy into something closer to gloss than soup. It is eaten with naan, not rice.
Where the name comes from
The name comes from the Arabic nahar, meaning day or morning. Nihari was a breakfast: cooked overnight, eaten at dawn, and built to carry a labourer through until evening. It is generally traced to the kitchens of late Mughal Delhi and became a defining dish of Karachi and Lahore after 1947.
Almost nobody eats it at dawn now. It has moved to lunch and dinner, but the overnight cooking has stayed, because there is no way to shorten it and still get the texture.
What it tastes like
Deep, dark, and beefy rather than sharply spiced. The heat is present but sits underneath, and the dominant note is the long-cooked meat itself. It is rich, so a portion goes further than the size suggests.
It is normally finished at the table with ginger julienne, green chilli, coriander and a squeeze of lemon. Those are not garnishes: the lemon and ginger cut the fat, and the dish is noticeably heavier without them.
What bread goes with nihari
Naan, always. The gravy is too thick for rice to work properly and the whole dish is built around being scooped. A plain naan is AED 1.50 on our menu, butter naan is AED 3, and roghni or kalonji naan is AED 4 if you want something more substantial.
What it costs at Taier Al Monal
Beef Nihari is AED 20 at our restaurant in Abu Shaghara, Sharjah, opposite Nesto Hypermarket. With a couple of naans that is a full meal for one person under AED 30, which puts it among the better value plates we serve alongside Chicken Biryani at AED 15.

Is nihari healthy
It is high in protein and, because it is made from bone-in shank cooked for hours, high in collagen and gelatin. It is also genuinely rich in fat, which is what makes it satisfying. It is a substantial meal rather than a light one, and it is best treated that way.
